This is the best copy cat of Cafe Rio Shredded Pork that I have tried. Brandi has a good one it is much faster. This one takes a little more time.
The night before you plan on serving this dish. You need to do the following
Take a Pork Roast 31/2 to 4 lbs
Mix together and rub on port roast. Put in crock port on low. Cook all night
2 Tbs brown sugar
1 to 1 1/2 t cayenne pepper
2 tsp cumin 1 t salt
Next morning add
1 can coke 1 c chicken stock
2 cloves garlic minced
1 small onion chopped
Keep cooking in the crock pot on low.
About an hour before serving, shred roast and add 1 c brown sugar
Salad Dressing
1 pkg Hidden Valley Ranch Dressing mix
8 oz C Salsa Verde
2 cloves garlic
3/4 c mayo
3/4 c sour cream
1/4 t Tabasco sauce (if kids are eating this I omit this)
1/2- 1/2 c fresh cilantro
Mix in blender. Add lime juice to taste. Mix ahead of time and chill if for several hours. It can be thinned with buttermilk
We like to go to Costco and get the package of the uncooked flour tortillas. We cook them add a bed of lettuce, some tomatoes, cheese and the pork with some rice and black beans. YUM!!

I have made this dish many times and it always is excellent. I do not eat pork so I just use beef. Still great and it is gluten free.
